I love Lobster and anything that is seafood related. My love of the delicacy started when I was a child. Mother worked for a trucking company that transported lobsters from Maine. So, once a month, she would bring home a big batch and we would have a lobster feast in the comfort of our own home!
Spring is just around the corner, and I thought would do a new spin on the traditional Nacho. My Langoustine Lobster Nachos are made with Langoustine Lobster, black beans, fresh tomatoes, onions, avocado, green chilies and black olives with cheese sauce drizzled on top. Ingredients for our Langoustine Lobster Nachos
Serves: 2
Prep Time: 15 – 20 minutes
- One can S&W Organic Black Beans
- One green chili pepper
- 1 cup tomatoes
- 1 cup black olives
- 1 cup white onions
- 1 cup cilantro
- 16 oz Langoustine Lobster (you can find it the frozen food section)
- 1 1/2 Tb butter
- 1 cup milk
- 8 oz Mexican cheese mix
- One bag of white tortilla chips
Directions for Langoustine Lobster Nachos:
Step 1: Chop up the tomatoes, black olives, white onions and cilantro and place to the side.
Step 2: In a bowl mix 1 cup cilantro, 1/4 onions 1 1/2 table spoon butter, a dash of salt and place in the microwave for 1 1/2 mins to 2 minutes.
Step 3: Place the 16 oz Langoustine Lobster in bowl, stir in the melted butter mixture and place to the side.
Step 4: Using a double boiler method, add 1 cup milk to the pan and bring to a light boil. Then slowly add in the 8 oz Mexican Cheese-stiring till the cheese is completely melted.
Step 5: Build your Langoustine Lobster Nachos by placing a few handfuls of tortilla chips on a plate, drizzle the melted cheese sauce. Next, place more chips on top and add the tomatoes, olives, white onions and cilantro, add Langoustine Lobster and drizzle a bit more of the cheese sauce.
