Funfetti Ice Cream Sandwiches with Fresh Strawberries

I have a little bit of a sweet tooth, and one of my favorite things to do is to create delicious treats. Today’s quick and easy recipe is sponsored by BuyDig.com.

Recently I was reorganizing my kitchen cupboards, and I realize half of my cookware was missing and the other half needed to be thrown away, which was disappointing. Matt assured me that he would begin replacing my cookware collection by Mother’s Day. However, I was blessed with an early Mother’s Day Gift, thanks to BuyDig.com, who sent me a Calphalon 10-pc. Bakeware Set to try out.

When the boys were little, we could not afford nice cookware. But, now that my daughter is here, I’ve made a commitment to fill my pantry with quality cookware, and that goal is attainable now that I’ve found Buydig.com. As I open my new Bakeware Set, I instantly fell in love with the 14″x17″ Cookie Sheet and couldn’t wait to try it out.

Since it’s almost summertime and Matt likes ice cream we figured we would surprise the kids with our rendition of Funfetti Ice Cream Sandwiches with fresh strawberries. We used the 12″x17″ baking sheet, 14″x17″ cookie sheet and cooling rack included in our Calphalon 10-pc. Bakeware Set to make these truly delicious treats. Our kids loved them, and I am sure yours will too.

Funfetti Ice Cream Sandwiches with Fresh Strawberries 

Makes 6 Ice Cream Cookies

Ingredients:

Please note that some of the instructions below were taken from the Funfetti Cake Mix and Betty Crocker Fluffy Icing box instructions.

Ingredients

 

  • One box of Pillsbury Funfetti Cup Cake mix
  • Vanilla Bean Dreyer’s Ice Cream
  • Two Eggs
  • 1/3 Cup of Vegetable Oil
  • Eight Fresh or Frozen Strawberries Sliced
  • Tablespoon of Almond Extract
  • Two Tablespoons of Sugar to sprinkle over the sliced Strawberries
  • Plastic Wrap

Make sure you pre-heat oven to 375ºF before you start. Mix the Cup Cake mix, eggs, almond extract, oil together in a mixing bowl until thick and moistened.

Then with a spoon scoop out about a 1 in ball and place it on the baking sheet.

Once you have them all laid out on the cooking sheet. Grab glass or something with a smooth bottom so you can flatten the cookie balls to about a half inch. What we used is my measuring cup with flour on bottom so it won’t stick.

Next you place the cookie sheet in the middle rack of the oven and bake for 6 to 8 minutes or until bottom is light golden brown.

While the cookies are baking slice up the strawberries and place them evenly on a baking sheet. Then coat them with sugar and place them in the refrigerator for about 15 minutes to chill. Next move the ice cream to the refrigerator so it will soften.

Check of the cookies re done with by poking each cookie in the middle with a toothpick. If the toothpick comes out clean then your cookie is done. Then transfer the cookies to a cooling rack to let cool. (We let them cool on the rack for 20 minutes. Then placed in the fridge as we mixed the ice cream and strawberries.)

Next fold the strawberries directly in the ice container and mix.  Cover and place back in the freezer for about 10 minutes.

Almost done, take a good size scoop of ice cream and place in between the two delicious Funfetti cookies. Then take a spoon and scrap the access off the side to make sure it is smooth all around the cookies, it does’t have to be perfect. Wrap with plastic and place back in the freezer until you are ready to eat.
