I love pizza, and so our team thought it would be nice to create a Veggie Pizza that is healthy and so good the kids will be asking for seconds. Plus it’s that New Year which is the perfect time to developed new tasted buds.
Ingredients for our Yummy Veggie Pizza (Makes 15, 3″ pieces)
Spinach Dip Sauce:
- 1 box, frozen, chopped spinach, thawed and squeezed of excess water
- 1 packet dry vegetable soup mix
- 1 cup mayo
- 1 cup sour cream
- Vegetable Pizza:
- 1 tube crescent rolls
- shoestring carrots
- fresh mushrooms, sliced
- broccoli, cut into small pieces
- cauliflower, cut into small pieces
- red pepper, cut into small cubes
Directions:
Step 1 – Make your spinach dip a few hours ahead to allow the flavors to blend. In a large bowl, combine, spinach, soup mix, sour cream and mayo. Mix well. Cover and refrigerate for at least an hour, or overnight if possible.
Step 2 – On a nonstick cookie sheet or lightly greased pan, unroll crescent rolls and press seams together. Heat oven to 375 and bake 15-20 minutes or until golden brown on the bottom. Let set for a minute and slide a spatula under the crust to be sure it doesn’t stick. Cool completely.
To assemble pizza:
Step 3 – Spread spinach dip onto the crust. Top with cauliflower, broccoli, mushrooms, red pepper and shoestring carrots. Cut into 3″ pieces and serve. Keep any leftover pizza covered in the refrigerator.
